A plurale tantum formed from acētum (“sour wine, wine-vinegar, vinegar”) + -ārium; from acēre (“to be sour”) from Proto-Italic *akēō (“to be sharp-tasting, sour”), from Proto-Indo-European *h₂eḱ- (“sharp”).
