From Middle Persian 𐭱𐭪𐭥 (šakar), from Sanskrit शर्करा (śárkarā, “ground or candied sugar, originally grit or gravel”), from Proto-Indo-European *ḱorkeh₂ (“gravel, boulder”). Compare Arabic سُكَّر (sukkar).
