Etymology
From an internet meme in which an increasingly absurd series of thoughts with a common theme is paired with a series of images showing a brain expanding and emitting beams of light, thus sarcastically presenting the absurd ideas as "not absurd, but impossible for small-minded people to comprehend." The "galaxy" part likely relates to the brain becoming bigger and that the beams of light resemble stars, along with the image typically having a space-like background.
